I like to use uncooked pork cocktail sausages for this recipe. It’s important to cook the sausages before they go into the batter as the sausage will take longer to cook all the way through.

If you cannot get hold of cocktail sausages then substitute for chipolata sausages. Just cut them in half before cooking!

So that you’re not using multiple trays I recommend cooking the sausages in your muffin tray rather than on a baking tray. This way you just pour the batter on top once the sausages are cooked and then return to the oven.

Yield: Serves 4
Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes

An easy dinner idea for kids! Mini toad in the hole with cocktail sausages and a simple Yorkshire pudding batter combined to make a yummy midweek meal the whole family can enjoy.

Ingredients

  • 18 pork cocktail sausages or 8 pork chipolatas uncooked
  • 150g plain flour
  • 2 eggs
  • 150ml milk
  • 110ml water
  • Vegetable oil

Instructions

  1. Heat oven to 180C fan.
  2. Get a muffin tray and put a sausage in each well. Cook the cocktail sausages or chipolatas following the cooking instructions on the pack (usually around 20 to 25 minutes). If using chipolatas then cut them in half first.
  3. While sausages are cooking mix the batter. Put flour in a bowl and make a well to crack the eggs into. Add the milk and water gradually, stirring with a fork as you combine and beat the egg.
  4. Mix this together thoroughly until you have a smooth batter.
  5. When sausages are ready remove the muffin tray from the oven and pour enough mixture to fill each well up to three quarters full. Check the sausages are not stuck to the bottom of the tray first, give them a little nudge with a spatula to unstick them if you need to.
  6. Return to the oven and cook for 15 minutes until the batter is golden brown and risen. Serve with veggies and enjoy!
